Ingredients

  • 5 or 6 citrus of your choice, peeled and sliced crosswise - navel, cara cara, blood oranges and/or grapefruits
  • a handful of shaved red onion
  • 1/3 cup of Marcona almonds
  • a handful of fresh herbs like basil and mint
  • a generous drizzle of olive oil (about 3-4 Tbs)
  • Salt and pepper to garnish

Instructions

  1. Using a small paring knife, slice off the end of each citrus, then peel each side, removing the membrane. Slice the citrus crosswise until you have enough citrus medallions to fill a platter.
  2. Arrange your sliced citrus on a platter.
  3. Garnish with Marcona almonds, shaved red onion, and fresh herbs.
  4. Drizzle with olive oil, and sprinkle with salt and pepper to taste.
  5. Enjoy!
