Ingredients
- 1 large bunch of kale
- 1 avocado
- 2 lemons
- Pinenuts (as desired, I usually do a small handful)
- Parmesean cheese, shredded
- Olive oil
- Salt + Pepper
Instructions
1. Sautee the pinenuts in a little olive oil on the stove until a light golden brown and set aside to cool
2. Peel the leaves from the kale stalks, chop roughly
3. Open the avocado and slice in to small pieces
4. Mix the avocado and kale together thoroughly
5. Cut the lemons in half and squeeze the juice on the salad, being careful not to get any seeds in the salad! [Tip: stick a fork in to the lemon and twist to help get even more juice out.
6. Add a drizzle of olive oil and salt + pepper to taste
7. Mix in the cooled pine nuts
8. Sprinkle a little Parmesean cheese on top
