- 4 large apples
- 2/3 cup coconut sugar
- 3 tablespoons cinnamon
- juice from half of lemon
- 2 cups oats
- 1/2 cup butter
Instructions
- Preheat oven to 350 degrees. Peel, core and dice all four apples into 1/2″ by 1/2″ cubes.
- Add apples to a bowl and add 1/3 cup coconut sugar, 1 1/2 tablespoons cinnamon, and juice from half a lemon. Using a rubber spatula, mix all ingredients together.
- Pour apple mixture into 10 1/2″ by 7 1/2″ baking dish.
- In a bowl, mix together oats, 1/3 cup sugar, and 1 1/2 tablespoons cinnamon.
- Cut butter into 1/2″ pieces and add to oat mixture.
- Using your fingers, mix oat mixture and butter together until butter is fully incorporated. Cover apples with the crumble mixture.
- Bake for 25-30 minutes or until oat crumble on top is beginning to turn golden.
- The apple mixture will thicken as it sits, so let it sit as long as possible and serve with ice cream!
