The Healthy Snack We’re Serving Up for Halloween

It’s not news that we take Halloween very seriously over here at the CS Bungalow—from decked out costume ideas, to spooky full moon parties, to all the pumpkin recipes we can get our hands on—October is by far one of the busiest and most exciting months for our team. But, being self-proclaimed ‘Halloween experts’ nevertheless comes with a hefty sugar tax that often finds us back in the kitchen making yet another pumpkin spice latte come 3-o-clock. In order to fight the post-sugar rush crash and burn, we’ve decided to trade in our frosted and packaged Halloween treats for something healthy, but just as sweet. Almond Butter Date Balls With Coconut Flakes

Ingredients

Units Scale
  • 2 cups medjool date, pits removed
  • 1/2 cup roasted almonds
  • 1/2 cup organic almond butter
  • 1/2 cup unsweetened coconut flakes, divided
  • 1 pinch salt

Instructions

  1. Combine pitted dates, almonds, almond butter, salt, and half of the coconut in a food processor and blend until a sticky dough forms. (If dough is not coming together, add one tablespoon of water and continue blending.)
  2. Wet your hands and roll form dough into 2 tablespoon-sized balls.
  3. Roll balls in shredded coconut until covered as desired.
  4. Let dry at room temperature, then place in fridge for 2 hours before serving. Store in an airtight container.
  5. Enjoy!
