The first time I served these sweet potatoes was at a dinner party we hosted at the beach house a couple months ago. I was making a few of my favorite dishes—but it was these simple roasted sweet potatoes that ended up stealing the show (and everyone texted me for the recipe the next day). Since then, I’ll admit I’ve made them again for just about every gathering we’ve hosted. And I’ve also made them for myself on random weeknights when all I want is something cozy to eat in front of a good show.
I’m a lifelong sweet potato lover, but this recipe has solidified for me the absolute best method for roasting sweet potatoes. You want to keep them in the oven for longer than you think—until they’re practically melting inside their skins, then finish them with butter, flaky salt, and the most addictive spicy honey seed crunch. The result is sweet, salty, spicy, buttery, and crunchy all at once.
And one other reason they’re ideal for any fall hosting occasion? You can prepare almost the entire dish ahead of time. Below I’m sharing exactly how I make these, along with a few other favorite recipes to round out the perfect fall dinner menu.
The Secret to Perfectly Roasted Sweet Potatoes
Here’s the thing about roasting sweet potatoes: Most of us take them out of the oven way too soon. I’ve found that the best way to bring out their natural sweetness is to wrap each sweet potato individually in foil and roast them at 400°F for about 90 minutes. Yes, an hour and a half. And sometimes even longer, depending on their size.
You’re looking for potatoes that are completely soft, almost collapsing inside their skins. The long roasting time allows their natural sweetness to develop until the flesh becomes incredibly tender and syrupy. At that point, they barely need anything else to taste delicious. A little butter and flaky salt are plenty (and sometimes I skip the butter altogether.)
But for a dinner party, we level them up with this incredible spicy honey seed crunch.
The Spicy Honey-Seed Crunch You’re About to Put on Everything
While the potatoes are roasting, I make a quick mixture of toasted sunflower seeds, pumpkin seeds, almonds, and sesame seeds. Once everything starts turning golden, I add honey, flaky salt, and Aleppo pepper. The honey gets warm and sticky, coating the nuts and seeds in a sweet-spicy glaze that hardens into little crunchy clusters as it cools.
This topping is really what takes the sweet potatoes from a simple side dish to something that feels restaurant-worthy. And I always make a double batch and keep the extra spicy seed crunch in the freezer to sprinkle over roasted vegetables and salads throughout the week.
How to Make These Sweet Potatoes Ahead of Time
This is one of my favorite dinner party tricks. Roast the sweet potatoes, slice them open, mash in the butter and salt, and add the spicy seed crunch before anyone arrives. Then close each sweet potato back up in its foil wrapper and keep it in a warm oven for an hour or two until you’re ready to eat.
When it’s time for dinner, unwrap the potatoes, add fresh basil and sour cream, and bring them to the table. I love having at least one dish that’s completely done before any guests arrive.
A note on the seed crunch: You can prepare the topping a day in advance and store it in an airtight container at room temperature. For longer storage, I freeze extra batches so they’re ready whenever I need a crunchy finishing touch.
What to Serve With These Roasted Sweet Potatoes
These sweet potatoes are perfect for a simple vegetarian one-dish meal, but they’re also one of my favorite sides for a fall dinner party. Here’s exactly what I’d serve alongside them this month:
Sheet Pan Balsamic Salmon
This is one of my go-to recipes when I want dinner to feel special without spending the entire evening in the kitchen. The salmon gets brushed with a honey-balsamic glaze that caramelizes under the broiler, while the vegetables roast until they’re sweet and jammy.
Brussels Sprout Salad with Dates and Almonds
Thinly shaved sprouts get tossed with sweet dates, toasted almonds, parmesan, and a bright lemon vinaigrette. I especially love the contrast of this crunchy, fresh salad alongside the soft, buttery sweet potatoes.
Roasted Sweet Potatoes With Spicy Honey Seed Crunch
- Total Time: 1 hour 45 minutes
- Yield: 4 1x
Description
These roasted sweet potatoes are syrupy sweet, buttery, and topped with a spicy honey seed crunch.
Ingredients
For the sweet potatoes
- 4 small sweet potatoes (regular, Japanese sweet potatoes, or yams)
- 2–4 teaspoons butter
- Flaky sea salt, to taste
- Fresh basil, chopped
- Sour cream, optional
For the spicy honey seed crunch
- Olive oil, enough to lightly coat the bottom of a small skillet
- 1/4 cup raw sunflower seeds
- 1/4 cup raw pumpkin seeds (pepitas)
- 1/4 cup sliced or slivered almonds
- 2 tablespoons sesame seeds
- 1 tablespoon honey
- 1 generous pinch flaky sea salt
- 1 pinch Aleppo pepper (or red chili flakes for extra heat)
Instructions
1. Roast the sweet potatoes.
- Preheat the oven to 400°F. Wash the sweet potatoes, then wrap each one tightly in aluminum foil.
- Place them directly on the middle oven rack and roast for approximately 1½ hours, until completely tender.
- Don’t rush this step! The potatoes should be so soft that they practically collapse when you press them gently. This is how you get that incredible syrupy sweetness.
2. Prepare the spicy honey seed crunch.
- While the potatoes roast, heat a thin layer of olive oil in a small skillet over medium heat.
- Add the sunflower seeds, pumpkin seeds, and almonds. Cook, stirring frequently, until they begin to turn lightly golden.
- Add the sesame seeds and continue stirring until the mixture is fragrant and golden brown.
- Drizzle the honey over the seeds and nuts, then sprinkle with flaky salt and Aleppo pepper. Add red chili flakes if you prefer more heat.
- Continue cooking and stirring until the honey coats everything and the mixture becomes slightly sticky.
- Transfer to a sheet of parchment paper and spread into an even layer. Allow to cool completely before breaking into clusters.
3. Assemble the sweet potatoes.
- Once the sweet potatoes are tender, remove them from the oven and carefully unwrap.
- Cut a slit down the center of each potato. Add ½–1 teaspoon butter and a sprinkle of flaky salt.
- Using a fork, gently mash the butter and salt into the flesh so everything is evenly seasoned.
- Top generously with spicy honey seed crunch, fresh basil, and an optional dollop of sour cream.
- Serve warm.
