Rotisserie chicken is one of my stealthiest weeknight cheats to get dinner on the table FAST, and I have a feeling I’m not alone. More juicy and succulent than any chicken I can roast myself (let’s be honest) and ready to go at the grocery, what’s not to love? I will say that the flavor of the chickens can vary quite a bit from store to store. My favorites in Austin are from Central Market — the Hatch Chile is next-level falling-off-the-bone good — but any good grocery store will likely have a decent version. Sometimes at the end of a long workday when I really just feel like picking up food, I’ll simply cut up a rotisserie chicken and serve it with a salad and sweet potatoes that I baked in my meal-prepping that week and it’s so much more homey (and healthy) than takeout. These all sound amazingly comforting! I will definitely have to check out some of these recipes next time I am in the mood for a quick and easy dinner that still packs in all the flavor.
