Rotisserie chicken is one of my stealthiest weeknight cheats to get dinner on the table FAST, and I have a feeling I’m not alone. More juicy and succulent than any chicken I can roast myself (let’s be honest) and ready to go at the grocery, what’s not to love? I will say that the flavor of the chickens can vary quite a bit from store to store. My favorites in Austin are from Central Market — the Hatch Chile is next-level falling-off-the-bone good — but any good grocery store will likely have a decent version. Sometimes at the end of a long workday when I really just feel like picking up food, I’ll simply cut up a rotisserie chicken and serve it with a salad and sweet potatoes that I baked in my meal-prepping that week and it’s so much more homey (and healthy) than takeout. When you’ve got just a little more time, try one of these 9 recipes that take your store-bought bird and turn it into something that tastes like you’ve been slaving at the stove all day.
