St. Patrick's Day Dinner Party with Natasha Lawler


Serves 1

  • 2 oz Hendricks Gin
  • 1 oz lime juice
  • 2 mini cucumbers - preferable English with skin on - sliced
  • 1/2 oz green chartreuse
  • 1/2 oz simple syrup
  • large handful mint leaves
  • green sanding sugar


  1. Take a martini glass and dip the rim into a plate of water, then into a plate of the sanding sugar.
  2. In a food processor, puree lime juice, mint and cucumber.
  3. Add to a shaker with the rest of the ingredients and ice. Shake and strain into glasses.
  4. For the garnish, take one whole mini cucumber and using a mandolin slicer, thinly slice it into ribbons. Thread onto a cocktail pick.

    Éirtini (pronounced “air-tini”) would be a better name for it, as Éire is the Irish word for Ireland. It’s a much better play on the word “Martini” than “Irish-tini”.
