Berbere Spiced Twice-Roasted Sweet Potatoes

2 large sweet potatoes, scrubbed
2 tbsp honey
2 tbsp unsalted butter
1 clove garlic, minced
kosher salt
1 tbsp McCormick Gourmet Organic Berbere Seasoning
fresh herbs like cilantro or mint for garnish


  1. Preheat oven to 400 degrees. Poke holes all over the sweet potatoes and wrap each in foil. Place on a foil-lined, rimmed baking sheet and roast until potatoes are tender, about 60-70 minutes. Unwrap and let sit until cool enough to handle.
  2. Turn the oven to broil. Combine butter, honey, and garlic in a saucepan and cook over low heat until butter is melted. Remove from heat and stir in berbere and a pinch of salt.
  3. Cut the sweet potatoes into thirds on the diagonal, then arrange in a baking dish flesh side up. Mash lightly with a fork, drizzle with honey butter sauce, and broil just until browned and crispy on the edges.
  4. Garnish with fresh herbs and eat!
