2 large sweet potatoes, scrubbed
2 tbsp honey
2 tbsp unsalted butter
1 clove garlic, minced
1 tbsp McCormick Gourmet Organic Berbere Seasoning
fresh herbs like cilantro or mint for garnish
- Preheat oven to 400 degrees. Poke holes all over the sweet potatoes and wrap each in foil. Place on a foil-lined, rimmed baking sheet and roast until potatoes are tender, about 60-70 minutes. Unwrap and let sit until cool enough to handle.
- Turn the oven to broil. Combine butter, honey, and garlic in a saucepan and cook over low heat until butter is melted. Remove from heat and stir in berbere and a pinch of salt.
- Cut the sweet potatoes into thirds on the diagonal, then arrange in a baking dish flesh side up. Mash lightly with a fork, drizzle with honey butter sauce, and broil just until browned and crispy on the edges.
- Garnish with fresh herbs and eat!
