Pimento Cheese

Serves 8-10

Pimento Cheese

  • 12 oz. extra sharp Wisconsin Cheddar, finely shredded
  • 12 oz. smoked Gouda, finely shredded
  • 8 oz. whipped cream cheese
  • 2 cups diced pimento
  • 1 jalapeño, seeded and minced
  • ½ large red onion, finely diced
  • ¼ cup minced scallion
  • ¼ cup minced parsley
  • ¼ cup Dukes Mayo
  • 2 Tbsp. grain mustard
  • Salt and fresh cracked pepper to taste


  1. Combine all ingredients in a mixer equipped with a paddle attachment mix until all ingredients are incorporated evenly.

    Sounds good enough to make now! But honestly, was just reading More Magazine and they also claim the pimento cheese craze is coming back with all sorts of young chefs…never went out of style in my house.
