Serves 4-6

Ingredients
1 cup rice
1 cup chicken stock
2 cup chopped tomato
1/2 c chopped onion
salt and pepper to taste
Instructions
Pre-heat oven to 350 degrees.
Sautee onions until colored, then add rice and cook until they start to smell nutty (stirring often to prevent burning of rice).
Add tomatoes and cook until liquid come out, season with salt and pepper.
Add chicken stock and bring to a boil.
Cover and place in oven for 20 minutes.
Remove from oven and let stand covered for 5 minutes.
Fluff and serve.
