The breakfast food that is everywhere but that’s still impossible to get tired of because it’s so darn delicious: avocado toast. There’s something about those flavors that come together to form the perfect bite, and I’ve been upgrading ours with a pure spicy kick of crushed red pepper flakes.

Spicy Avocado Toast

Ingredients

  • Avocado
  • Toasted bread — I prefer a seeded, grain-y variety
  • Fried eggs
  • Chopped cilantro
  • Crushed Red Pepper Flakes
  • A squeeze of lime

Instructions

  1. Toast the bread so that it's sturdy enough to hold your toppings.
  2. Cook eggs to desired doneness -- see our tips here for frying a perfect, sunny side up egg every time.
  3. Cut your avocado into slices and mash directly onto your toast, top with a fried egg and season with salt, pepper and crushed red pepper flakes.
  4. Garnish with cilantro and a squeeze of lime.
  5. Enjoy!

    Are you kidding me? The very first breakfast for the #31mornings challenge and you guys didn’t even put avocado on the grocery shopping list… Maybe go back and review the others?

      Hi Christine — Yep, we totally left off the most important ingredient of the first breakfast! Argh, major fail on our part, and we’re triple checking the others to make sure that it doesn’t happen again. Sooo sorry about that…I’m blaming 2016.     It would be very helpful to have the recipes for the week prior to the start of each week. Mornings are rushed; earlier access to the recipes would allow time to review each recipe as well as pull or prep the ingredients the night before. Thank you!
