It seems like mushrooms are all that anyone’s talking about in health food circles right now. While these aren’t of the hallucinogenic variety, they almost feel like “magic mushrooms” in their own rite: various types have been touted for boosting immunity, fighting cancer, and containing high amounts of antioxidants (hello, anti-aging!)

According to Whole Foods trend forecast, functional mushrooms should be on your radar, with varieties like reishi, chaga, cordyceps, and lion’s mane getting street cred as wellness ingredients in dietary supplements and coffee, tea, snack bars, and broth.

I’m personally looking for ways to incorporate all sorts of mushrooms into my diet, and while different species contain different levels of benefits, they’re all pretty darn good for you.

Oh man, these all look so delicious! I didn’t know mushrooms had so many health benefits – I need to start cooking with them again. I’m a little scared of the more exotic varieties, but mostly from how they look, rather than taste. Also, the Ferry building in SF has an incredible mushroom seller!

I love it when a recipe comes with so many alternatives. There are already a few variations I would love to try.
