Everything Toast

- 6 pieces of everything rye bread, toasted (We make our own but I would suggest buying some nice sourdough rye and dressing it up with some everything spice, which in our case, is onion seed, cumin, garlic, poppy seed and ajwan.)
- 3 c cauliflower mixture
- 3 T black olive oil
- fresh herbs
- For the Cauliflower Mixture:
- 3 c chopped cauliflower
- 1 c chopped cashews
- ¼ c golden raisins
- ½ T ground cumin
- ½ T ground black pepper
- 1/8 c chopped parsley
- 1/8 c chopped cilantro
- extra virgin olive oil
- salt, to taste
- For the Black Olive Oil:
- 1 c black olives
- extra virgin olive oil
Instructions
- To make the cauliflower mixture, lightly roast the cauliflower with the extra virgin olive oil in a pan.
- When the cauliflower has started to soften, season with salt, to taste.
- Add the spices to the pan and toast until aromatic.
- Pull pan off the heat and toss in nuts, raisins and herbs.
- To make the black olive oil, soak olives in water overnight to remove the salt.
- Take olives out of water and let dry completely.
- Place dry olives in a blender and blend with extra virgin olive oil to loosen it to a sauce consistency.
- To make the everything toast, drizzle part of the black olive oil on toast.
- Spoon cauliflower mixture on top.
- Drizzle with more of the black olive oil.
- Garnish with fresh herbs.
