Kale “Love” Salad

Kale “Love” Salad

Ingredients
- 2 bunches curly kale
- Drizzle Olive Oil (for massaging kale)
- 1 handful quartered cherry tomatoes
- 1 handful toasted pine nuts (or almonds)
- 1 handful dried cranberries (or dried cherries)
- Seasoned rice vinegar
- Lemon Juice (to taste)
- 2 mined cloves Garlic
- 1 teaspoon minced shallot
- 1 tablespoon dijon mustard
- 1 tablespoon agave or honey
- 1 generous pinch sea salt
Instructions
- Wash and remove the ribs of each piece of kale
- Tear kale into bite-sized pieces
- Drizzle with olive oil
- Gently massage the oil evenly into each piece
- Add cherry tomatoes, pine nuts and cranberries
- Toss with dressing
- For the dressing: Combine rice vinegar, lemon juice, minced garlic, minced shallot, dijon mustard, honey and sea salt in a mason jar and shake to emulsify.
Beacause I’m lazy, I’ll probably try this with pre-bagged baby kale!
